Method
Bring plenty of salted water to the boil
Add ½ butter and oil into a large frying pan, when hot add spring onion and cook gently for 2-3min, then add capers and smoked salmon and cook for 2min, then add cognac and flame it off, then Prosecco and reduce liquid by half. Add cream and reduce by 1/3, check seasoning
Drop pasta in water and cook as per packet instruction. Drain pasta and toss with sauce for 1 minute, add remaining butter and remove from heat. Keep tossing till butter has melted.
Serve immediately and garnish with herbs and salmon caviar
