Method

Preheat oven to 190C non fan. Grease and line a 22cm pie dish or 20cm round cake pan.

Using an electric mixer, beat butter and icing sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift together flour and spices. Fold into butter mixture with lemon rind, until combined. Chop 1 apple and mix into batter until just combined.

Spoon batter into prepared pan and smooth surface. Slice remaining apples and arrange in a circular pattern over top. Sprinkle over raw sugar. Bake for 40-45 mins, until a skewer inserted comes out clean. Brush top with melted butter. Cool in pan. Serve at room temperature.

You can substitute the apples with any other seasonal fruit – bananas and pears work well.
