Method
Heat oven to 120c
Cut garlic bulb lengthwise and place flat onto a deep baking tray with garlic skin facing down. Dust with icing sugar, drizzle with extra virgin olive oil, sprinkle with fresh thyme and season. Cover with foil and cook for 1.30hr or till garlic is soft. Remove from oven and allow to cool. Remove garlic from bulb and mash into a pulp.
Whip butter in a mixer till creamy and soft, then add lemon and lime zests + lime juice, season to taste.
To serve, place toasted baguettes slices onto a large platter then spread garlic paste onto it, whipped butter and last garnish with anchovies and baby herbs (baby chard)
