Add oil and butter into a large nonstick frying pan. When hot add the sea bream fillets in with skin facing down, press against the fillets with a spatula to obtain a nice flat crispy skin. Cook for 3-4 minutes on each side. When cooked, remove fillets from the pan and place onto a serving dish.

Add wine, olives and potatoes and cook till wine has evaporated, then add LC sauce and bring to a simmer.

Pour sauce over the top of the fillets and serve immediately.

 1 LC Caramelized Onions + Fresh Thyme
 2 Small potatoes, 1cm diced, blanched in salted water
  Cup white wine, dry
  cup Green Sicilian olives pitted,halved
 3 tbsp Extra virgin olive oil
 10 g Unsalted butter
 Salt & Pepper
