Place all cut cherry tomatoes onto an oven tray, drizzle with oil, season well and dust icing sugar on them till coated. Cook in the oven at 120C for 30 minutes.

Heat oven to 65C. Add basil and extra virgin olive oil into a small tray or pot and leave in the oven till it reaches 65C. Then add tuna steaks and cook for 12 minutes.

To serve, place toasted sourdough onto a plate, drizzle with olive oil, then place 3 slices of mozzarella on top, season and drizzle again with extra virgin olive oil.

Remove tuna steaks from oil, place on top of mozzarella and then garnish with cooked cherry tomatoes, anchovies and baby basil leaves.

 500 ml basil-infused extra virgin olive oil
 2 buffalo mozzarella, each cut into 6 slices
 ½ punnet red ripe cherry tomato, cut in half
 ½ punnet yellow ripe cherry tomato, cut in half
 2 sprigs fresh thyme
 2 garlic clove, thinly sliced

 1 punnet baby basil leaves
 8 anchovies
 4 sourdough bread sliced, grilled then drizzled with extra virgin olive oil and dry chilli, cut into 2-3cm squares
