Heat a grill pan, when hot grill vegetables for 2-3min on each side and move onto a plate once ready, dress with a little Rosemary dressing and season

Grill beef to your liking, I suggest medium rare. Once ready, remove from grill and set to rest onto a chopping board for 5 minutes before carving into 1cm thickness

Assemble beef, vegetable onto a plate. Garnish with rocket leaves and Parmigiano shavings the beef, and serve a generous spoon of tomato jam. 4 Drizzle meat & vegetable with Luca’s rosemary dressing and serve

 100 g Fresh Tomato Basil Chilli Jam
 100 ml Rosemary Garlic Balsamic reduction dressing, ’Chef Luca Ciano’
 1 red capsicum, cut into slices and grilled
 1 zucchini, cut into slices and grilled
 1 eggplant, cut into slices and grilled
 20 g Parmigiano Reggiano shaved
